Prepare one full sheet pan for dinner, and then keep the leftover portions for later meals. I cut the chicken into 1-inch cubes alongside roasting it together with broccoli, pepper, onion, and tomatoes, followed by completing the dish with the reserved balsamic glaze that becomes dark and caramelized during the final 5 minutes.

I reserve half of the glaze before the chicken goes into the oven, since honey can easily burn during the time the cubes finish cooking, while the last drizzle receives an additional five minutes in the oven to cling to the chicken and vegetables without turning bitter. The balsamic vinegar consistently remains sharp in striking contrast to the honey, while I never skip that important late coating during a hectic night.
Utilize the largest lined baking sheet available to spread the mixture in a single even layer on it, allowing some space between the pieces. If vegetables are stacked upon each other, moisture that becomes trapped within them causes them to steam. This condition leads to the failure of achieving browned edges. Use two pans for the situation when the sheet appears crowded, while also drying the vegetables before placing them in. First, cut all of the vegetables into uniformly sized, bite-sized pieces.
Chicken thighs work well with what I possess, while maple syrup may substitute for honey in the glaze. Other vegetable options consist of asparagus, zucchini, as well as Brussels sprouts. However, it is important to clearly note that potatoes indeed need a head start in order to grow effectively. The red onion becomes tender, and I enjoy this with the tomatoes.
What makes this special
- One pan of food yields four servings. This leaves portions that can be set aside for later meals during the cooking process in the kitchen.
- The chicken along with the vegetables roasts in the glaze, so a batch does not leave behind a considerable stack of pots.
- Parchment helps the sheet pan clean easily after the balsamic glaze cooks onto the edges. Using this parchment simplifies the task of cleaning.
- The final layer of glaze is applied at the end of the overall process. It keeps the honey from burning at a high heat. This occurs during the process of finishing the chicken.
- Utilize two different types of pans for the purpose of creating a larger batch. The vegetables can still roast evenly in a flat layer on the surface of the tray.
Ingredients
- •1 ½ lbs boneless, skinless chicken breasts (cut into 1-inch cubes)
- •¼ cup balsamic vinegar
- •3 tbsp olive oil (divided)
- •2 tbsp honey (or maple syrup)
- •1 tbsp Dijon mustard

Instructions

Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper.

- 3
Put the cubed chicken in a separate bowl, add about half of the balsamic glaze, and toss to coat.
- 4
Combine the chopped vegetables and marinated chicken in a large bowl. Drizzle with the remaining 1 tbsp olive oil and toss.

- 7
Remove the sheet pan from the oven and serve immediately.
