I make this dish at serving time for two people and sprinkle it with salt and pecans while the syrup is still hot. Sliced bananas are soft and covered with a brown sugar syrup. A sheet of parchment paper under the banana slices helps catch some of the syrup for half servings on the side at the table.

Select firm-but-ripe bananas with very few spots. Do not use too-ripe or heavily spotted bananas, as they may fall apart in the air fryer. Do not use very green bananas, as they lack sweetness to pair well with glaze. Slice bananas in half lengthwise, leaving gaps between slices, and lay bananas flat-side down in liner.
Mix butter, brown sugar, cinnamon, and vanilla extract to make a sandy paste. Spread the paste on the sliced and crusty edges of the bread. A pastry brush works well for spreading the paste, but you can also use the back of a spoon. Cinnamon specks in the brown sugar mixture will show through when the bread is cooked.
Start testing at 6 minutes to avoid overcooked or burnt sugar on the fruit due to syrup bubbling around the fruit. Serve halved fruit immediately after syrup starts to bubble. Finish with additional caramel sauce drizzled over the fruit, or serve with pancakes and French toast tops filled with creme brulee. Other options to serve with caramelized fruit include vanilla bean ice cream.
What makes this special
- It serves two people, so you won't have extra fruit when serving dessert to two people.
- The 13-minute meal allowance includes time to make a quick breakfast item to add to breakfast or a hot dessert to serve with dinner.
- Parchment paper is used to catch the combined syrup. Drizzle the combined syrup over cooked bananas.
- The pecans are added at the end for texture contrast with the soft fruit. The pecans are toasted.
- A basket air fryer or oven air fryer would be suitable options to use with this method and your current kitchen tools.
Ingredients
- •2 whole bananas (large, firm but ripe)
- •1 tbsp unsalted butter (15 g, melted)
- •2 tbsp brown sugar (25 g, light or dark)
- •½ tsp ground cinnamon (1 g)
- •½ tsp vanilla extract (2 ml)
- •¼ tsp flaked sea salt (1 g, for garnish)
- •2 tbsp toasted pecans (15 g, finely crushed)
Instructions
- 1
Preheat the air fryer to 400°F (200°C) for 3 minutes. Peel the bananas, slice each one lengthwise into two halves, and line the air fryer basket with parchment paper.
- 2
Whisk the melted butter, brown sugar, ground cinnamon, and vanilla extract in a small bowl until they form a thick paste.
- 3
Arrange the banana halves flat-side up on the parchment. Brush the brown sugar mixture generously over the exposed flesh, pulling it all the way to the edges.
- 4
Air fry at 400°F (200°C) for 6 to 8 minutes, until the surface is deep golden-brown, the glaze is actively bubbling, and the edges are charred.
- 5
Transfer the bananas to a plate, spoon over the pooled caramel syrup, and immediately top with flaked sea salt and finely crushed toasted pecans.
