Thick-cut bacon is ideal for this recipe. Thick-cut bacon is less likely to fall apart on a skewer. I brush the folded bacon on a skewer with sweet chili sauce. The sweet chili sauce seeps out from the edges of the folded bacon. This dish makes a tasty, spicy-sweet bacon snack.

I cook skewers on a wire rack over a pan lined with foil to catch fat and help the bacon cook from underneath. I leave space between folds when skewering bacon to help it cook in the middle and use a wire rack.
Brown sugar and soy sauce are ingredients in the glaze. Garlic powder is a seasoning. I stir the glaze to dissolve most of the sugar before first baking and apply glaze to both sides after the first baking. The folds can hold a lot of glaze and are difficult to prepare cleanly (the most challenging part of the recipe). Glaze settles as the pastry cools.
Let skewers sit for a few minutes after baking to set the glaze. I like to serve skewers on end in cups and jars at a party, but a platter is also an option. Red pepper flakes can be added to the glaze for more heat. Black pepper should be used before baking.
What makes this special
- Sweet chili sauce provides spicy and sweet tastes in this recipe. Brown sugar is an ingredient in the glaze.
- One pound of bacon yields 12 skewered bites that can be used as a main dish with no other ingredients.
- Soy sauce flavors brown sugar. Garlic powder flavors the glaze.
- Both ends of the skewers are coated with glaze. Some of the folded bacon layers on the skewers are coated with glaze.
- This recipe has a minimal number of ingredients. Skewers can be a good option for tailgating.
Ingredients
- •1 lb thick-cut bacon (about 12 slices)
- •½ cup sweet chili sauce
- •¼ cup brown sugar (packed)
- •1 tbsp soy sauce
- •½ tsp garlic powder
- •12 wooden skewers (6-inch)
Instructions
- 1
Preheat the oven to 375°F (190°C). Soak the wooden skewers in water for at least 20 minutes. Line a large baking sheet with foil and set a wire rack on top.
- 2
Whisk the sweet chili sauce, brown sugar, soy sauce, and garlic powder in a small bowl until well combined.
- 3
Thread one bacon slice onto each skewer in an accordion or S shape, leaving space between the folds. Set the skewers on the prepared wire rack.
- 4
Bake for 15 minutes. Remove the baking sheet and brush glaze generously over both sides of the bacon.
- 5
Return the baking sheet to the oven and bake for another 10-15 minutes, until the glaze is bubbly and the bacon is crisp. Let the lollipops cool slightly on the rack before serving.
